Pago de Espejo is a family-run olive grower and producer based in Jaen, Spain, now led by the fourth generation of women olive growers of the Espejo family. The family estate, La Condesa, has belonged to the family since 1920 and has grown to more than 200 hectares with around 8,000 century-old Picual olive trees. Since 2005, and driven since 2015 by fourth-generation producer Rosario Minchon Espejo, the company has focused on limited-production, author olive oils, reaching an annual output of over 250,000 kilos. The company controls the entire process, from harvesting through milling and bottling at its own mill (almazara), selling directly to consumers as well as to gourmet shops, Michelin-starred restaurants and distributors. Its oils have been recognised with the Mencion a la Calidad award at Expoliva 2017 (one of the most important international olive oil fairs) and the Best Limited-Production Olive Oil award, as well as Flos Olei recognitions in 2017 and 2018.

Description

Pago de Espejo Picual is an early-harvest extra virgin olive oil from Jaen, Spain, hand-picked in late October/early November when the olive is still in "envero" (unripe stage) to concentrate aroma and polyphenols. Cold-extracted through purely mechanical processes within 24 hours of picking, which preserves its organoleptic properties and antioxidant content (vitamin E, oleic acid). On the nose it shows an intense fresh fruity aroma with notes of banana, almond, freshly cut grass and tomato plant; on the palate it is fruity and sweet with a light peppery finish, typical of the Picual variety. Produced under integrated production with limited yield. Store in a cool, dry place away from light. Awarded Mencion a la Calidad at Expoliva 2017 and Best of Class at the F.E.O. Olio Awards.
